it is from one of my co-worker, I love her Tiramisu very much :lol:
Here is the recipe, no cheating by using something different than what is in the recipe!!!!
You can get the espresso and savoiardi cookies either at super store ( sometimes) or for sure just on Hastings over the bridge in BBY at any of the fruit or Italian stores.
6 eggs
Sugar
Espresso ( about 3 cups of good strong espresso)
Savoiardi cookies ( 2 packs)
Mascarpone ( one pack ) you can buy at the Costco on Willington
Brandy/Cognac
Semi sweet chocolate or cocoa
1st make your espresso using Italian espresso coffee!!! ( Megan) use the espresso machine that I brought in for you. Once the espresso is ready pour into a big bowl and add about 5 tablespoons of sugar, taste to see if you need more sugar, don’t make it too sweet as the cookies are also sweet. Add about ½ cup of warm water to the espresso bowl and if you like some cognac or brandy. Espresso needs to be warm for dipping of the cookies.
Use an average casserole size dish.
2nd Take the cookies and dip them quickly in the espresso and line the bottom of the casserole dish with the dipped cookies. You need to dip them quickly but long enough as they absorb the espresso as soon as they are dipped ( don’t leave them in the espresso or they will fall apart). Once you have lined the bottom of the casserole with cookies start making your filling.
3rd Separate the egg yolk from the egg whites into two separate bowls ( make sure there is no egg yolk in the egg white or the egg white will not froth properly)
With a mixer beat the egg yolks with 6 teaspoons of sugar about 10-15 minutes until the egg yolk is very thick, then add the mascarpone cheese and beat altogether only for a couple of minutes.
In a separate bowl with a mixer beat the egg whites until very firm.
Once egg whites are ready, gently stir them into the egg yolk mixture.
4th Take ½ this mixture and cover the first layer of dipped cookies in the casserole dish. Then grate semi sweet chocolate on top or sprinkle with cocoa so you have a consistent layer of chocolate/cocoa
5th Dip more of the cookies and layer on top of the filling you have just completed. Finish layering the complete casserole and spread the remainder of the filling on top. Sprinkle with grated chocolate or cocoa.
Now refrigerate.
It is best to make the Tiramisu the night before so it can sit in the fridge overnight. Never make Tiramisu and eat right away as it needs time to set.
