牛排晚餐,
这些晚饭是照顾儿子的胃做的.
看Good Eats 里面有一个节目是自己可以把牛排 age 一下, Alton Brown 的方法是把牛排包在厨用纸里面, 架空, 在冰箱里呆个三天, 每天给牛排换纸巾, 有点像给伤口换绷带似的, 然后再煎来吃. 我有时没等到三天就做了.
我用这个法子做了好几次了, 都不错, 牛肉的品质感觉是高几档. 我买的Trader Joe’s 和 Costco 的牛排, 可以跟steak house 的牛排比, 牛肉里面的水份少了, 味道浓多了, 煎的时间也短点.
我们大人不敢吃太多红肉了, 特别是LG几乎是停止吃牛排了, 但儿子还是要常做给他吃的, 其实做牛排给他吃我很省事的, 有时是在外面做, 有时就在炉头上煎, 他爱吃很rare的牛排.
补:
牛排是用一张纸松松的包着,不要包紧, 然后放在架子上, 下面放个tray, 在冰箱里要通风,保持干燥, 常换纸.
煎是这样的, 牛排放室温后, 抹上橄榄油, 燃后撒上你喜欢的,调味料, steak seasoning, or just sea salt and coars pepper. 厚铁锅, 下面这个是毛毛妈介绍的 Gastrolux 锅, 在室内无烟味, 烧的很热, 锅里不用加油, 把牛排放进去煎, 像这个不厚的, 1.5" 每面大约 3分钟,用温度记,量130-135F 就好了. 取出后用锡纸蒙着, 5分钟后就可以吃了,
我儿子要 125F 就拿出来, 而且等不到5分钟就急着要吃的. 每个人对牛排的要求不同, 他一定要外面是焦香的, 外面是水水的, 淡淡的颜色, 他会不满意的.

配了土豆泥, 茴香菜头炒红椒, 很爱吃茴香菜头的味道, 用橄榄油煸炒, 加点盐和胡椒.

做了个面包, 用烤箱烤的, 太好吃啦!
跟大家分享把隔夜面包变新鲜, 面包放盘里, 用厨用纸, 水龙头上打湿后挤干, 盖在面包上, 微波炉打半分钟, 看面包大小, 不够软就再加几秒钟.
Outback Steak house Bread (no rye)

1 1/2 cup water -- warmed
2 tablespoons butter -- softened
1/2 cup honey
2 cups bread flour
2 cups wheat flour
1 tablespoon cocoa
1 tablespoon sugar
2 teaspoons instant coffee
1 teaspoon salt
2 1/4 teaspoons yeast
1 teaspoon caramel color -- optional
3 tablespoons cornmeal -- for dusting
Directions:
Place all of the ingredients in the bread machine and process on dough setting. The dough will be a little on the wet side and sticky, but if it seems too wet add more flour. When dough is done let it rise for 1 hour.
Remove from pan, punch down and divide into 8 portions. Form portions into tubular shaped loaves about 6-8 inches long and 2 inches wide. Sprinkle the entire surface of the loaves with cornmeal and place them on 2 cookie sheets. Cover and let rise for 1 hour.
Bake at 350 for 20-25 minutes. Serve warm with whipped butter.
