祖传秘方：四川凉面的做法（本是传女不传男，鉴于好吃者众，改为男女都传）

应兔MM的要求，特将祖传秘方公布如下：

四川凉面的做法：


1。面煮熟，捞出。冷处理有两种方法：其一，过凉水，冷却后沥干待用；其二，面盛于可漏水的容器中，适量加入色拉油或者香油拌匀，一只手用筷子挑起面条不停抖动，另一只手持扇子，不停的扇，直至面条冷却，不粘连。通常一碗面挑凉以后手腕会神经质抖动，边抖边扇 ，持续半小时左右:lol:

2。调料：这是最关键的一步

红油辣椒，豆豉油，蒜茸葱花，酱油，醋，糖，花椒面（花椒油也可），调成汁，倒入面中拌匀。

调料成功与否关键在于醋和糖的使用。

多试验几次，多做总结，相信会有好吃的面条了。

There is no way I could comment on ur recipe of 四川凉面 since I am a native of Beijing (BJ), not 四川. However, I like to write out what 四川凉面 in BJ. I am a fan of 四川凉面 for many yrs. I visited the best 四川凉面 in BJ when I was in BJ last week (Er Mei Restaurant, the same name as the most famous mountain in 四川). I have two issues:
1. The noodle is steamed, not boiled, for 不粘连.
2. The 调料: it has sesame酱 in it.
My question is the 四川凉面 in BJ is a BJ-四川凉面, not a real 四川-四川凉面, right?
Last one, the 四川凉面 we used to have in BJ 40 yrs ago was 0.24 Chinese yuan. Now it is 5.00 Chinese yuan.

嘿嘿，现在已经有了上海版的四川凉面，再加上这个北京版的四川凉面，估计还有新疆版，东北版。。。反正，合自己口味的就是正版 :lol:
