糖卷果的做法 Recipe of Beijing Tradtional Snak.
I found it's hard to translate (my poor English :?) Just see this vedio first to make some sense.

原料: 山药, 大枣, 面, 油皮, 糖桂花, 糖, 芝麻
Ingredient:
Yam, Date, Flour, Fried Tofu Skin (optional), Osmanthus fragrans Sauce (Optional), Raisin, Suger ( Or brown suger), sesame.

Fried Tofu Skin: (from T&T)
1. 将山药拍扁,把一半山药一半枣(去核), 少许面粉或者江米粉,糖桂花, 葡萄干 混合, 加一点水, 使面粉将原料粘在一起. 山药枣的比例依个人口味而定.
Smash Yam. Put Yam, date (pitted), Raisin, Osmanthus fragrans Sauce together. Add a little bit flour and water to make all ingredient stick together.
2. 用腐皮把原料包好上锅蒸10-15分钟
Wrap (1) ingredients by one piece of thin fried tofu skin. Or if you don't have fried tofu skin, just put it in a bowl. Steam 10-15 minutes.
3. 用屉布把蒸好的原料赶成圆条状, 用刀沾水切2cm左右块.
Put steamed ingredients in a wet tray cloth, press and push it long and thin. Dip the knife in the water and cut it to pieces (2 cm thin)
4. 用油将切好的块炸至金黄色.
Put some oil in a fry pan, fry (3) to brown.
5. 在锅中放一点油, 然后加水加糖(或红糖), 熬至粘稠起沫, 放入芝麻, 把炸好的卷果放入锅中, 撒上果料.

I once tried cooking that yam and found out that the skin makes you itch when you peel it, but I love the texture and taste. For sure I will be making this dessert.
